Chop the raw octopus into little pieces and boil it on water for about 15 minutes. Drain it and let stand.
On a separate pan, prepare the stew with olive oil, laurel, sliced onion and sliced garlic. Then, add the octopus and let it cook for about 10 minutes. Add the tomatoes and wine. Cook for a little while.
Add a bit of water, salt and pepper. Cover it up and let it cook for about 30 minutes.
When serving, add a bit of parsley.
