On the island of Madeira, the fishing methods used are considered sustainable, as they are artisanal and have a low by-catch rate. These include pole-and-line fishing (tuna fishing), bottom longline fishing (black scabbardfish), and freediving (limpet harvesting). It is also worth highlighting the responsible production of gilthead seabream through offshore aquaculture.

Immediately after capture, the fish is handled with care, properly chilled, and transported under controlled conditions, ensuring that the cold chain is never broken. This initial care is essential to preserve freshness, texture, and the natural characteristics of the fish.

Upon arrival at our facilities, the fish undergoes strict quality control. Only fish that meets our standards proceeds to the processing stage.
Preparation processes — from gutting to cutting and packaging — are carried out by experienced teams, in controlled environments and using appropriate equipment. We use preservation methods that maintain flavor, nutritional value, and product safety, such as refrigeration and rapid freezing, always in line with best industry practices.
Each stage is designed to minimize the time between the sea and the consumer, ensuring fresh, safe, and high-quality fish.

Food safety is a fundamental pillar of our activity. We strictly comply with all legal requirements and apply control systems that ensure hygiene and traceability throughout the entire process.
