Gilthead Seabream (Sparus aurata) is a fish highly valued in gastronomy for its versatility, delicate flavour and firm texture. In this article, we will cover all the essential information about this species, from its biological characteristics to the best ways to prepare it, and the health benefits it offers.

Characteristics of the Gilthead Seabream

Gilthead Seabream

The Gilthead Seabream is easily recognised by its oval-shaped body, greyish colouring, silvery belly, a black spot above the operculum, and an unmistakable golden band between the eyes (which gives it its name). It also has thick lips and a set of strong front teeth. This species can reach up to 70 cm in length.

They usually feeds on molluscs, crustaceans and sea urchins.

Its reproduction period occurs from October to December. Although spawning takes place at sea, juveniles seek the protection of estuaries to develop. This species is hermaphroditic, as most individuals are born male and may later change to female once they reach sexual maturity.

Habitat and Sustainable Production

Naturally found in the Northeast Atlantic and the Mediterranean Sea, it mainly inhabits coastal areas, at depths of up to 150 m, as well as estuaries, preferring temperate waters.

Today, Gilthead Seabream is also farmed in aquaculture systems, especially in Europe. Offshore aquaculture, practised by Ilhapeixe on the island of Madeira, offers ideal conditions for the sustainable production of this species, ensuring healthy, high-quality fish.
