Season the roe with salt, pepper, and garlic, and let it rest for at least one hour.
Subsequently, heat a frying pan with olive oil on the stove, and let it heat up. Once hot, fry the roe and let it cool.
After they've cooled, cut the roe into desired-sized slices.
In a separate container, chop the onion, garlic cloves, and cover with parsley, olive oil, and vinegar to taste.
Mix the roe into the previously made mixture until everything is well combined.
Serve with a side dish of your choice.
